Its HOT out, and who wants to turn on an oven?!  Well with these lovely confections no oven is needed.

No Bake Cookies

  • 2 cups white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 cup chunky peanut butter
  • 3 cups quick cooking oats

In a saucepan over medium heat, combine the cocoa, sugar, milk and butter. Bring to a boil, stirring occasionally. Boil for 1 minute. Remove from heat and stir in the salt, vanilla, oats and peanut butter. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour.

And then just enjoy these puppies!

Coconut Macaroons

These are a family recipe of the fox!

  • 2-7oz packages of coconut flakes
  • 1-14oz can of sweetened condensed milk (not evaporated milk)
  • 2 tsp. vanilla

In a large bowl combine coconut, vanilla, and milk. Mix well. Drop by rounded teaspoonfuls onto aluminum foil lined and sprayed with Pam pan. Bake til slightly brown at the edges at 350 for 8-10min. Once cookies are cooled you can spread the bottoms with melted chocolate and then place on wax paper to harden.  With the left over melted chocolate you can drizzle over the top of the cookies. And voila…delicious!

 Chocolate and Oat Caramel Bars

This recipe has more oats and more chocolate, but a little caramel in the mix and we move on to the bar vs. the cookie….what do you think?

  • 2 1/4 cups flour (divided)
  • 2 cups oats
  • 1 1/2 cups brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups cold margarine
  • 2 cups chocolate chips
  • 1 jar caramel ice cream topping

In a bowl combine 2 cups flour, oats, brown sugar, baking soda, and salt- cut in margarine til crumbly.  Press half of this crumbled mix in the bottom of a greased 9x13in pan.  Bake this at 350 for 15min.

In another bowl whisk caramel and 1/4 cup flour until smooth.  When take out cooked crust, sprinkle choc. chips over the top and then drizzle caramel syrup mixture over that.  Lastly sprinkle the rest of the crumbled mixture over the top and put in oven to bake again for 18-20 min.

The recipe suggests waiting 2 hours to cut and serve, and if you don’t they will be less like bars and more like lava…but who can wait 2 hours?!

Oatmeal Chocolate Chip Cookies

These are perhaps the longstanding favorite of The Fox….just gonna start it off with a sure fire crowd pleaser!

  • 2 sticks of butter or margarine
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 1/2 tsp vanilla
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp hot water
  • 2 cups flour
  • 2 cups oatmeal
  • 1 bag chocolate chips

Just mix all the ingredients in the order listed, drop on a greased cookie sheet, and bake for 8min at 375.  And there you have it…..pure deliciousness and you even feel a little healthy cause there is oatmeal in them!
